Vegan Chia Strawberry Chocolate Chip Blondies


1 cup gluten-free flour (I used Cup4Cup ) 
3/4 cup coconut sugar 
4 tablespoons coconut oil (room temperature, not melted)
3 tablespoons chia seeds 
1/2 cup non-dairy milk (I used Foragerproject unsweetened coconut cashew milk)
1/2 cup chocolate chips (I used Lilys)
1 cup freshly chopped strawberries 


1. Preheat oven to 375 degrees F

2. In a large bowl mix the coconut oil, milk and chia seeds

3. Add the dry ingredients (flour and coconut sugar) and continue to mix

4. Lastly toss in the chocolate chips and strawberries and mix with a spoon

5. Coat your pan with coconut oil or a baking sheet (I used a muffin pan with separate containers)

6. Bake in the oven for about 20 minutes (I took mine out a little early because I'm all about that geweyness...)

7. Enjoy!
