Vegan Banana Coconut Butter Cookies

Ingredients:

Filling:

1/4 cup gluten-free or paleo flour

1/2 cup maple sugar (or other unrefined sugars)

1/4 cup unsweetened cashew milk (or other non-dairy milk)

1 tsp baking soda

1 tbsp coconut oil (melted)

3 tbsp Eatingevolved banana coconut buter (melted)

1 tsp cinnamon

1 tsp vanilla

Directions:

1. In a large bowl melt the coconut oil and coconut butter

2. Add vanilla, cinnamon and mix

3. Add milk, dry ingredients and mix until dough is consistent 

4. Roll dough into round pieces (about 1.5 tbsp each)

5. Bake in the oven at 350 degrees F for about 15 minutes

Although I'm not vegan, I love experimenting with new recipes. I think taking on a new challenge is always exciting when it comes to baking or creating new recipes in the kitchen! You can substitute your choice of different flour types, unrefined sugars and non-dairy milk in this recipe. These cookies turned out really well and I definitely recommend you guys give it a try, I know I'll be making more real soon!
