Pumpkin Spice Chia Pudding


1 cups milk (I used Forageproject unsweetened cashew milk)

1/2 16 oz can pumpkin

4 tbsp chia seeds (I used Nutiva)

1 tsp vanilla

1-2 tsp pumpkin spice (I used Simplyorganics) 


1. Blend all ingredients for about 2 minutes

2. Refrigerate in a bowl overnight

3. Enjoy!

This recipe is perfect for the fall season and so simple to make! It tastes delicious on it's own or with some yogurt, granola, or any of your favorite toppings! I like to have mine with some unsweetened cashew yogurt, fresh fruit, and sliced almonds for some crunch. This chia pudding makes a perfect snack any time of day or as an addition to your breakfast bowl! Chia seeds are filled with fiber, antioxidants and omega-3 fatty acids! Definitely give this recipe a try this fall season, and you won't be disappointed!
