Peanut Butter Chocolate Chip Blondies 

Ingredients:

1 cup flour (I used Bobsredmill paleo flour mix)

2/3 cup sugar (I used brown coconut sugar)

1/4 cup smooth unsalted peanut butter (I used Pics, room temperature)

4 oz butter (I used Miyokos vegan cashew butter)

1 egg (I used Vitalfarms)

1 tbsp vanilla

a dash of sea salt

1/2 cup chocolate chips (I used Lily's)

Directions:

1. Preheat oven to 350 degrees F

2. Melt the butter in a large bowl

3. Add sugar, flour and vanilla

4. Mix until mixture cools down a bit 

5. Add in the peanut butter, egg and sea salt

6. Toss in chocolate chips last with a spoon or spatula

7. Pour mixture in a baking pan (8 x 11") (either covered with baking sheet or coconut oil)

8. Bake in the oven for about 20 minutes

9. Allow to cool completely (about 30 minutes)

10. Enjoy! 

***In this recipe, you could substitute a flax egg for the vegan version. All you need is one tablespoon of flax meal and two tablespoons of water. Thoroughly mix the two and allow to sit for about five minutes before adding to your mixture. You will additionally need to cook your blondies for about 3-5 more minutes for the same consistency.
