Paleo Chocolate Banana Bread

2 cups almond flour (I used Bobsredmill)

2 eggs

1 banana

1/2 cup coconut sugar

1 tbsp unsweetend almond milk

1 tbsp RAW coconut butter (I used Artisanaorganics)

1 tsp vanilla extract

1 tsp baking powder

paleo chocolate for layering and topping (I used Eating Evolved Sea Salt Almond flavor)

1. Preheat oven to 375 degrees F

2. Blend the eggs, banana, and almond milk

3. In a bowl combine the almond flour, coconut sugar, and baking powder

4. Combine wet and dry ingredients in the bowl and mix

5. Add the coconut butter and vanilla extract to the mixture

6. Pour half the batter in your baking pan (I used baking sheets in my pan) then crumble chocolate pieces on top

7. Pour the second half of your baking mixture on top and layer with more chocolate

8. Bake in the oven for about 30 minutes then broil on medium for about 5 minutes to bake fully through

9. Let cool and serve

It can't get any simpler than this! This recipe is gluten-free, dairy-free, paleo, refined sugar free and absolutely delicious! I came up with this recipe one night and it turned out so perfectly. I love banana bread, but what I love even more is adding chocolate to my loaf because it just makes it so much more delicious! It's the perfect treat for those busy mornings to go with your tea or coffee or just to enjoy for dessert any time.

I could have probably eaten the whole thing by myself, but I what I love even more is sharing my recipes with others so that they can learn about healthy alternatives to delicious food and desserts! I took this loaf to work the next morning and it was gone in just seconds! Try it out for yourself, and I promise you won't be disappointed!
