No-Bake Camu Protein Bars

Ingredients:

1/2 cup coconut butter at room temperature (I used Artisana)

2 scoops plant-based protein powder (I used Navitas Vanilla flavor)

1 scoop collagen peptides (optional, I used Vital Proteins unflavored)

1 tsp honey (or maple syrup/agave for vegan option)

1 tbsp matcha powder (I used Navitas)

2 tbsp camu powder (I used Navitas)

2 tbsp maca powder (I used Navitas)

4 tbsp non-dairy milk (I used Foragerproject unsweetened cashew milk)

1 tsp vanilla

1/2 tsp cinnamon

Optional Toppings:

about 2 tbsp chocolate ghee (I used Fourthandheart passion fruit flavor)

unsweetened coconut shreds

sliced almonds

Directions:

1. In a large bowl mix the coconut butter, vanilla, honey and milk

2. Add the camu, cinnamon, maca, and matcha and mix more

3. Lastly add the protein powder and collagen (if using)

4. Place a baking sheet in a small pan and spread the mix at the bottom of the pan (it may not take up the entire pan)

5. Refrigerate for about 30 minutes

6. Remove from the fridge and top with about 2 tbsp chocolate ghee, spreading all across

7. Sprinkle with sliced almonds and coconut shreds

8. Refrigerate overnight

9. Enjoy!

You don't need a fancy mixer or anything to make these bars. I just mashed all my ingredients in one big bowl and the summer time helps set all the ingredients (like the coconut butter and ghee) to the perfect consistency so you may not even need a microwave to melt your ingredients! I snack on these protein bars throughout the day, or if I'm in a rush to leave the house in the morning, and they keep me full for up to three hours. They contain all my favorite superfoods like maca, which I use to boost my energy levels, camu, increases immunity and longevity, and matcha, full of antioxidants. I also added lots of healthy fats like coconut butter and ghee for some extra brain power! I recommend keeping your bars refrigerated until you want to eat them because otherwise they might lose their consistency in the summer heat, or at least it feels that way here in LA! I've made two batches of these so far and they all disappear in less than 24 hours. Hope you guys enjoy these delicious bars!
