Molasses-LESS Gingerbread Cookies

Ingredients:

1/2 cup cassava flour

1/3 cup coconut sugar (or maple sugar)

3 tbsp milk (I used vanilla almond)

2 tbsp maple syrup

1/2 tsp cinnamon

1/2 tsp all spice

1/4 tsp ginger

1/4 tsp cardamom  

1 tsp vanilla

Directions:

1. Pre-heat oven to 350 degrees F

2. Mix flour, sugar and all dry spices in a large bowl

3. Add in maple syrup, milk, and vanilla

4. Mix thoroughly 

5. Roll dough into 1.5 tbsp round balls (makes about 1/2 dozen cookies)

6. Bake in the oven for about 12-15 minutes

7. Enjoy with your favorite glass of milk!
