Gooey Cashew Butter Squares

Ingredients:

Cookie:

1/2 cup flour (I used Bobsredmill almond flour)

1 cup sugar (I used brown coconut sugar)

1/2 cup cashew butter (I used Artisana Organics)

1/3 cup chocolate chips (I used Lily's) 

3 tbsp melted butter (I used Miyokos vegan cashew butter)

1 tsp baking powder 

2 eggs (I used Vitalfarms)

1 tsp vanilla

a dash of sea salt

Chocolate Drizzle:

1 tsp coconut oil

2 tbsp chocolate chips

Directions:

1. Preheat oven to 350 degrees F

2. Melt the butter in a large bowl

3. Allow to cool and add all other ingredients (toss in chocolate chips last)

4. Pour batter into a 8"x 8" pan (I coated my pan with coconut oil)

5. Bake in the oven for about 18-20 minutes 

6. Cut cookies into round squares and allow to cool completely for about 30 minutes

7. In a small bowl, melt the coconut oil and chocolate chips

8. Drizzle chocolate on top and allow to cool for another 10 minutes

8. Enjoy!
