Blueberry Chia Jam

Ingredients:

1/2 cup water

2 cups frozen blueberries

1/3 cup milk (I used unsweetened almond milk)

3 tbsp chia seeds

1 tbsp vanilla

a few dashes of cinnamon 

Directions:

1. Bring the water and frozen blueberries to a boil in a medium pot

2. Allow to boil for about 2 minutes

3. Turn down the heat to medium/low and add the milk (stir frequently)

4. Add chia seeds, vanilla and cinnamon

5. Stir frequently and allow mixture to heat for at least 3 more minutes

6. Add more water if necessary (I like my jam thick)

7. Allow to cool and refrigerate! 

*I used my spatula to mash some of the blueberries

*Add coconut sugar, maple syrup or other sweetener of choice if desired
